So, apparently I am not the only one of my friends currently going through a crockpot phase. My friend Kristin led me to The Crockpot Lady's website, which I must admit is pretty awesome. Right after I visited that site and started cracking up at the humor level, I found out that my friend Caitlin was on a serious crockpot kick, too, and sent the link to her.
Anyway, the Crockpot Lady (Stephanie) committed herself to using her crockpot every day for an entire year - 2008. There are a ton of recipes (and she admits that they are not all winners) on the website, and today, I am making the Salsa Chicken and Black Bean Soup. This has become a staple in Kristin's house, and I tried it once over there, so I already know that it will be good. It is in the crockpot as I type, simmering away to perfection.
I did leave out the mushrooms and cumin though. I'll add spice when it's done, if it needs it, but I just can't stand cumin. And the mushrooms don't seem to go with the rest of the ingredients, if you ask me, so those were left out. I added a bit more corn to make up for the mushroom omission. I'll let you know how it turns out. (Sidenote - as much as I love avocados, I just couldn't justify buying one for this, since they are a dollar each! I decided to save the money and the fat content...)
And yes, I realize how long it has been since I last posted on here. I broke the resolution to blog more often almost as soon as I had made it. But, I'll try...

I made a crockpot dish last Saturday for the first time in years.
I make a quick and easy chicken and blackbean corn salsa dish that Jim asks for practically everyday, but it isn't a crockpot dish. I made a blackbean corn salsa and avacado dish back when we were in Novato, then a week or so ago on my lunch break at Trader Joe's in SR, I was shopping for the the ingredients to make my blackbean corn salsa dish again, and they had a free sample that added a bit more ingredients to what I already was making (lettuce, tortilla chips and chicken). I use the mysquite pre-cooked chicken at TJ's (so it takes like 7minutes to cook) and it is delicious. Jim asks for it like every night..almost like, "can we have it..can we..can we..can we!!" :) I haven't put the avacado back into this dish, but I'm sure it would taste really good too.
I'll have to check out that crockpot website b/c it is still sitting on my counter and once it is put away, I don't use it for a year or so. May as well get some use out of it.
Yeah, mine was put away for ages before I took it out again right after Christmas. I think it's the out of sight out of mind mentality... I've pulled out the immersion blender too, and used it to thicken my last soup. Both the crock and blender have remained on the counter, and thus, shall continue to be used for the time being...
I miss TJ's being so close to the office. :(
I think I remember that blackbean corn salsa - it was core wasn't it? (You know, they got rid of core!)
I read the recipe and my mouth just salivated at the idea of the taste those ingredients could create! MMMM...I am so going to have to try that! And since it is 17 degrees where I'm currently at, a thick and hearty soup seems so ideal! Thanks Tami! Oh, and welcome back!
Aren't you guys getting a Trader Joe's across the street? Kathy was mentioning something about that..or maybe it was a Whole Foods... I love TJ's being so close!! It might be even a tad closer than the Novato one. If we could walk "as the crow flys" then we could walk there in a heart beat. We have KMart (which sucks) within walking distance (though I don't walk there), 24Hr Fitness (like you guys have), JoAnne's Fabrics and a ton of other stores within walking distance. Starbucks is just 2 blocks over but they are closing next week for remodeling. Grr! (i don't go there that much anymore, so not that bad). They are extremely slow, but at least they have a drive-thru! LOL
With regards to the corn salsa, I believe it was Core. I haven't looked into WW in awhile, so I didn't know they got rid of it - though I didn't like that program when I was doing WW last..I'm more stuck on points. I'm just cutting out a most of the bread from my diet now, and eating more fruits and veggies. I've been pretty good and have lost about 4 lbs in the last 2 weeks (ya know for the B.L at work thing we are doing...)
Well anyways, maybe I'll do a crockpot dish. I'll have to look more at that website.
We've been crock potting it too. Which is funny, since my mom never trusted them, and it took me years to overcome her prejudice against crock pots. I'm looking for a good barbacoa recipe...
